RAER has taken great care to source the very best sherry casks from the Jerez region of Andalucía in Spain to create their mouth-watering sherry finish whiskies. The casks are first fill Pedro Ximénez sherry casks, which come from the world-renowned sherry region of Jerez. This area has been producing wines for centuries, and their strict adherence to rules laid down in Roman times ensure that the grape varieties and soil types used in production are of the highest quality.
RAER has taken the award-winning whisky and decanted it into the sherry casks, creating both Oloroso and now Pedro Ximénez finishes. The casks are then laid down for further maturation in bond at the Jackton Distillery, allowing the whisky to absorb the rich, complex flavours of the sherry that was previously contained within the cask. The resulting expressions are truly unique and wonderful examples of the national drink.
The colour of the whiskies produced by RAER is a direct result of the sherry previously contained within the cask.
